Summertime Art~ Food

It’s almost too pretty to eat… ALMOST.

And now for a quick recipe for Blackberry Cobbler from my beloved grandmother, Nanny…

Easy Blackberry Cobbler

2 cups blackberries (or other fruit such as peaches)

1 cup sugar

1 stick butter

3/4 cup sifted flour

2 tsp baking powder

1/8 tsp salt

3/4 cup milk

Melt butter in a deep 2-quart baking dish at 350 degrees in the oven. Make a batter of sugar, flour, baking powder, salt and milk.  Pour batter over the melted butter. DO NOT STIR! Put fruit on top. DO NOT STIR! Bake at 350 degrees for 45 minutes to 1 hour (I like it a little brown on top.)  Enjoy!

Eking out the last bit of summer…

“Eking” is a word according to Google, so I’m using it.  It’s a strange word that describes how desperately I’m clinging to summer, trying to enjoy every second of freedom before real life comes crashing down when school starts in two weeks.  “Eking” looks like this:  Last minute trips to the lake.  Spending the day in Charleston for my birthday.  A spur of the moment dip in the pool.

If I don’t answer my phone, I’m busy “eking” and I’ll call you back…

Here are a few snapshots from our quick trip to Charleston.  I can’t wait to go back in the fall when it’s cooler.  It was 100 degrees with 100% humidity!  History and southern charm everywhere you look.

Landon Joines

At first glance, this darling red-headed baby boy seems perfectly healthy.  But hidden under his shirt is an IV that keeps him alive.  We met on the Blue Ridge Parkway near Sparta, NC for this photo shoot, at the historic Brinegar Cabin (c. 1885), which was once owned by the Joines family.  Here is Landon’s story:

“Landon Joines was born on April 20, 2009. Within hours of Landon’s birth, his family was told that Landon was going to die. Landon’s intestines had twisted around the artery normally supplying blood to his intestines. His small intestine had died and doctors stated that Landon would not survive.

In what Landon’s family describes as divine intervention, or a miracle, it was discovered that Landon could survive, with a transplant. Landon’s small intestines were removed and intravenous feeding is now nourishing him while he waits for a transplant. Doctors at Children’s Hospital in Boston, Massachusetts recommended a life-saving multi-visceral transplant. Volunteers in the Northwest North Carolina region are raising an estimated $75,000 to help with transplant related expenses.”
